| Ingredients |
| 3 cups light brown sugar |
| 2 cups margarine, softened |
| 4 large eggs |
| 3 cups all-purpose flour |
| 1 cup soy flour |
| 1 teaspoon salt |
| 2 teaspoons baking soda |
| 2 tablespoons plain soy milk |
| 1 teaspoon vanilla |
| 2 cups roasted unsalted hulled soynuts, crushed |
| 4 cups semi-sweet chocolate morsels |
1. Preheat oven to 350 degrees.
2. In a large mixing bowl, cream brown sugar and margarine with electric mixer for 2 minutes.
3. Add eggs one at a time and beat until light and fluffy.
4. In a large bowl, combine dry ingredients and add to sugar mixture.
5. Beat in soy milk and vanilla.
6. Stir in soynuts and chocolate chips.
7. Spray baking sheets with non-stick vegetable coating. Drop cookie batter onto sheets with a teaspoon.
8. Bake for 8-10 minutes. Makes approximately 10 dozen cookies.
